Located in Vittoria, Sicily, COS is devoted to transparency in winemaking. Their philosophy is simple: let the land speak. Grapes such as Frappato, Nero d’Avola, Grecanico, Zibibbo, and Moscato are farmed organically and fermented naturally, often in clay amphorae rather than oak or steel.
