On Oct. 25, Che Figata's Table Italiano takes you to Central Italy!
Our culinary tour of Central Italy is anchored by Lazio and its capital city, Rome, with its international influences, but also is shaped by the Sicilian heritage of Molise and the coastal seafood selections of Le March.
Cuisine of this region ranges from lavish antipasti prepared from fresh seafood, preserved meats and fresh, young produce, to spicy hot peppers, porchetta. The area is known for the most fragrant olives and olive oils, along with pastas made from wheat, potatoes, rice and polenta.
Most of the wine produced in Lazio is white, though it is home to many reds including international varieties such as Merlot, Cabernet Sauvingnon and Petit Verdot. Le Marche also is known for its white wines, particularly those from the Trebbiano and Verdicchio grapes and Molise produces more than two-thirds of its wines from its Trebianno vineyards.
