Executive Chef Austin Fausett

Blending an inherent passion for cooking and penchant for local products with expertise honed at some of the most celebrated restaurants around the world, Austin Fausett brings an eye for detail and a deep appreciation for ingredients in the role of Executive Chef of Hotel Arista at CityGate, a mixed-use business and entertainment campus in Naperville, IL. In addition to bringing unique experience and expert oversight to the AAA Four Diamond boutique hotel’s event and in-room dining services, Fausett leads the dining experiences at CityGate’s Wine Spectator Award-winning Che Figata Italy-to-Table restaurant, Zorba Cocktail Bar and Lavazza gourmet coffee shop.

 

Fausett’s vast culinary experience includes Michellin-rated restaurants in Europe, and renown luxury properties such as The Inn at Little Washington – the longest-standing Forbes Five Star and AAA Five Diamond hotel in the world – where he served as purchasing sous chef, responsible for local ingredient sourcing.

 

The culinary industry has recognized Fausett throughout his career. He was among the first-ever Washington, DC, Zagat 30 Under 30 “Rockstars Redefining the Industry” and named StarChefs Rising Star in 2014. The Restaurant Association of Metropolitan Washington recognized him with a 2015 Rising Culinary Star and a 2017 Chef of the Year nominations.

 

Fausett served as Executive Chef at such renown eateries in the DC/Virginia region as Proof and Trummer’s. He sharpened his skills in some of the country’s most applauded restaurants coast to coast – from the former Craftbar in New York City to San Francisco’s Town Hall – as well as in Europe. While Executive Chef at Trummer’s, he annually served at White House events, preparing meals with produce curated from First Lady Michelle Obama’s White House Kitchen Garden, a cornerstone of her Let’s Move initiative to fight childhood obesity. His affinity for fresh garden ingredients is an ideal fit for Che Figata, which grows much of its own produce, along with locally sourcing.

 

A Midwest native, born and raised in neighboring Wisconsin, Fausett started cooking as soon as he could get his hands on a pan, first learning from his mother how important it was for food to bring people together. He began his professional culinary career at 14 in one of the kitchen’s most essential roles: dishwasher. 

 

He is inspired by his deep appreciation for agriculture and a desire for providing award-winning excellence to his guests, making him a perfect fit for his role with Hotel Arista and its adjacent eateries.
